- 1). Pour Kosher salt into the bottom of a 5-gallon bucket. Cover the bottom of the bucket completely with 2 inches of the salt.
- 2). Place bait on the salt. Use shrimp, fish, squid or other bait of your choice. Remove the head and shell from shrimp. Salt 5-inch or smaller fish such as menhaden or mullet whole. Remove the head, tail and guts from larger fish and cut the fish into pieces. Cut squid into strips.
- 3). Arrange the bait in a single layer on the salt. Place another 2 inches of salt on the bait. Continue layering bait and salt until all of your bait is used or the bucket is filled.
- 4). Leave the bait to cure for three days or longer. Allow smaller and thinner bait such as shrimp or cut squid strips to cure for three days. Leave thicker whole fish or fish fillets to cure for up to a week.
- 5). Remove the preserved bait from the salt in the bucket. Place the bait in plastic bags for storage until it's ready for use.
