While I was traveling around Italy I came to this small town in the mountains filled with cheerful and fantastic people.
One of them was Romano, an old man who would always cook for his friends.
He showed me how to cook his soup under the condition of passing it along.

Ingredients 1 Link of sweet Italian sausage, 3.
5 oz.
Remove casings 1 Chopped zucchini 4 Tomatoes, peeled, seeded and chopped 1 Cup of chopped onions 1/2 Cup of red wine 2 Cloves of minced garlic 1 Cup of tomato sauce 1/3 Cup of water 2 Tbsp.
of grated Parmesan cheese for topping 1 Cup of chopped carrots 1/2 Tsp.
dried basil 5 Cups of beef stock 8 Oz.
of cheese tortellini 1 Chopped green bell pepper 1/2 Tsp.
dried oregano 1 Tbsp.
of finely chopped fresh parsley Directions Use a large pot over medium high heat.
Saute sausage until well browned.
Save 1 Tbsp.
of the fat and drain the rest.
Add the onions and garlic and saute for 5 minutes more.
Stir in the water, tomatoes, beef stock, wine, tomato sauce, carrots, basil and oregano.
Let it come to a boil.
Reduce heat to low and let simmer for half an hour.
Skim away any fat in the surface.
Add the tortellini, green bell pepper, zucchini and parsley to taste.
Simmer for 10 more minutes, until tortellini is fully cooked.
Serve into individual bowls and garnish with the cheese.
