- 1). Note which type of wine is called for in the recipe and how much is required for cooking. Examples of wines called for in cooking include Port, Riesling, Sparkling Wine, Gewurztraminer, Mirin, Muscat and Sherry. The general categories of wine used in cooking are Red, White, Dry White, and Heavy White.
- 2). When a recipe calls for 1/4 cup or more of red wine, substitute an equal measure of red grape juice, apple cider, cranberry juice, chicken broth, clam juice, or flavored vinegar. You can also use nonalcoholic wine mixed with a tablespoon of vinegar to reduce the sweet flavor. For less than 1/4 cup of wine in a recipe, you can generally substitute water, grape juice, apple juice, vegetable stock, cranberry juice, or tomato juice.
- 3). For 1/4 cup or more of white wine called for in a recipe, substitute an equal measure of white grape juice, chicken broth, clam juice or vegetable broth. Again, you can substitute nonalcoholic wine with an additional tablespoon of vinegar to reduce sweetness. For less than 1/4 of a cup of wine, you can generally substitute white grape juice, apple cider, apple juice, vegetable stock, or water.
- 4). When a dry white wine is called for in a recipe, substitute an equal amount of water, white grape juice, chicken broth, diluted cider vinegar, ginger ale, white wine vinegar or the liquid from canned mushrooms.
- 5). For a heavy white wine, substitute an equal measure of unsweetened apple juice or orange juice, mixed with one teaspoon of orange or apple flavored extract or vanilla extract.
