- Breading Mahi-Mahi is similar to breading any type of whitefish. Frequently used breading ingredients for Mahi-Mahi are bread crumbs, crushed croutons or cracker crumbs. Use three bowls to separate the ingredients needed to coat the Mahi-Mahi. Mix an egg and less than ¼ cup of water in one bowl, pour your choice of breading ingredients into a separate bowl, and use the third bowl to prepare a bowl of seasoned flour.
- To broil Mahi-Mahi set the oven temperature on broil and preheat the oven for five to ten minutes. If one side of the Mahi-Mahi has skin on it, remove the skin so the bread coating will cover both sides of the fish. While the oven is preheating, prepare the fish by rubbing both sides of the Mahi-Mahi fillets with cooking oil; if your choice of cooking oil is olive oil, use it sparingly because it will burn. Coat the Mahi-Mahi with seasoned flour, dip it in egg batter, and then dip it in the breading mixture. Arrange the fillets on a broiling pan and place the pan directly under the broiler coils. Brown one side of the Mahi-Mahi for six to eight minutes, flip the fillets over using a pair of tongs, and brown the uncooked side for an additional six to eight minutes. The fish should be crispy around the edges and golden brown on both sides.
- Lemon and Basil Mahi-Mahi is a breaded and broiled Mahi-Mahi dish that does not take long to prepare. Mix white wine, olive oil, basil, half a lemon, salt, pepper and garlic powder in a bowl to make the lemon and basil marinade. Soak the Mahi-Mahi in the marinade for 30 minutes. Prepare the breadcrumb mixture with breadcrumbs, parsley, Parmesan cheese, olive oil, garlic powder, an egg and flour. Remove the Mahi-Mahi from the marinade and coat the fish with the breadcrumb mixture. Fry the fish until it is golden brown, then place it under the broiler for three to five minutes.
- Ingredients other than breading can be used with broiled Mahi-Mahi. For instance, mix minced garlic, onions, tomatoes, white wine, lemon juice, melted butter and salt and pepper in a bowl. Line the Mahi-Mahi up evenly in an oven pan, and pour the mixture over the fish. Cover the pan with aluminum foil and cook the fish under the oven broiler for 35 minutes. For a simpler recipe, use olive oil, seasoning rub and lemon wedges to coat the Mahi-Mahi. Place the fish fillets on a baking sheet and broil them uncovered for eight to ten minutes.
