- 1). first butter a 9" square cake pan and set aside
- 2). melt 1 cup butter and add 1 cup sugar, 3 tablespoons water, and 1/4 teaspoon salt. Bring to a boil and cook, watching so that it doesn't burn, bringing to the hard crack stage (about 300 degree on candy thermometer).
- 3). remove from stove and add 3/4 cup of nuts (which have been finely chopped or run through the blender) and 1 tablespoon of vanilla extract.
- 4). pour mixture into buttered 9" cake pan
- 5). grate 6 oz of semi sweet chocolate and sprinkle over tyhe hot toffee and spread quickly. Sprinkle 1/4 cup ground nuts on top and allow to harden.
- 6). when candy is hard, turn out and break into pieces (don't worry that they are even ~ uneven pieces are best)
- 7). sore in an airtight container putting foil or waxed paper between the layers
- 8). yields approx 1 & 1/2 pounds
