Instructions for an Al Dente Pasta Machine

    • 1). Attach the machine to the edge of the table or surface using the clamp provided. Insert the arm of the clamp into the hole near the base of the machine and tighten the foot upwards against the underside of the surface to clamp the machine firmly in place. Attach the smaller ribbon cutting attachment to the main body by sliding in to place along the tracks provided. Secure the handle in place by inserting into the hole near the two rollers on the main body of the machine.

    • 2). Weigh out 8 oz. of 00 grade pasta flour and place it on the mixing board or surface. Hollow out a large well in the center of the flour in which to place the eggs.

    • 3). Crack two eggs into the well in the center of the flour. Mix the eggs using a fork and gradually incorporate the flour from around the outside of the well. Continue to mix with a fork until the mixture becomes too stiff, then knead the remainder of the flour into the mixture. The dough should be pliable but not sticky. Wrap the dough in plastic and let it rest for 30 minutes.

    • 4). Clean the pasta maker by passing a small amount of the dough through the machine. Position the dough above the rollers and turn the handle to draw it through. Pass this dough through the machine several times then discard it.

    • 5). Set the rollers at their widest setting for the first pass of the dough. Pass the first piece of mixture through the machine, turning the handle to draw the pasta through the rollers.

    • 6). Fold the rolled dough in half and pass through the machine again. Repeat this process four or five times.

    • 7). Change the setting of the machine to number 2, moving the rollers closer together. Pass the pasta sheet through the machine on this setting four or five times.

    • 8). Repeat for consecutive settings of thickness. For lasagne sheets, stop rolling the pasta at setting 5, but for making linguine or tagliatelle, roll the sheet out to the thinnest setting.

    • 9). To cut the pasta into ribbons, select the thickness of pasta ribbon you require and insert the handle into the machine next to the appropriate cutting rollers. Carefully feed the pasta sheet through the cutting rollers using the handle to draw the pasta through the machine.

      Allow the pasta to dry on a drying rack or clean table cloth before cooking.
