Preparing a healthy, quick, and affordable meal for a toddler is something most parents strive for.
After all, we all want what is best for our children.
Quesadillas are a great lunch or dinner for a busy toddler.
As I experimented with various recipes in my own home, I developed a recipe that my son loves.
The ingredients you will need are: cheese (I use cheddar cheese, but you can choose whichever your child likes best), small whole-wheat soft tortillas, spinach, small pieces of cooked chicken breast meat, and carrots.
First, boil the carrots so that they are soft enough to cut into small pieces.
Lie one tortilla in a pan, and place a slice of cheese (or small pieces of cheese) onto the tortilla.
Next, cut the spinach into tiny pieces and place them on top of the cheese.
Once the carrots are done boiling, cut them into tiny pieces and add them to your quesadilla.
Make sure that they are soft enough for your toddler to chew, as hard carrot pieces can be a choking hazard.
Lastly, warm up some leftover chicken and cut it into small pieces.
Add these pieces to your tortilla and the rest of the ingredients, and place the second tortilla on top of the prepared ingredients.
Cover the pan, and place the quesadilla in the over for ten minutes at four hundred degrees.
Once the ten minutes have passed, take the pan out of the oven, uncover it, and let the quesadilla cool for a few minutes.
Cut the tortilla into fours, and your toddler will be waiting with anticipation to dig into this tasty meal.
To make the meal even more balanced, give your little one some blueberries for dessert!
