Introduction:
Manufacturing of margarine involves various steps. Normally, it involves six stages and they are Neutralization, Bleaching, Hydrogenation, Deodorization, Emulsification and Packaging. In the emulsification stage alone two or three margarine manufacturing equipment are used. All the equipments used for manufacturing the margarine and the way of processing are mentioned below:
High pressure feed pumps:
These pumps are generally used to put the emulsified margarine to the scrapped surface heat exchanger from a funnel shaped holding tank. The pistons of the pump are made of ceramic for special applications. To reduce the pressure pulsation while discharging the product in the line of processing, a pump is used, which normally has two or three pistons or plungers.
Now, for the further reduction of the pressure pulsation to the possible limit, the pumps are set up together with the pulsation dampener installed at the discharge. If the crankshafts of the pumps are rotated slowly then the pressure pulsation can be minimized.
High pressure scrapped surface heat exchanger:
Scrapped surface heat exchanger is one of the margarine manufacturing equipment, which is particularly designed for the production of margarine. It is one of the most vital and crucial equipment, which is also considered as the centrepiece of the equipments that is for the production of margarine. This equipment is used for first stage cooling, and then for super cooling. After this procedure, the following steps involving nucleation and crystallization takes place.
The scrapped surface heat exchanger normally made up of two or three heat transfer cylinders are assembled horizontally. So as to ensure heat transfer at the highest rate possible, the cylinders used for cooling are made up of pure steel or nickel.
Worker Units:
The crystallization of fat requires some time. This particular time that is provided in the crystallizers are generally known as worker units. These are nothing but cylinders which have a larger diameter and they are installed with the help of pins from the inner side of the walls of the cylinders and also on the rotors. The pins which are on the cylinder walls are called stationary pins whereas the pins on the rotors are caller rotating pins. This margarine manufacturing equipment is also important in the line of processing.
Resting tubes:
These tubes are generally attached directly with the packaging machine. When the margarine is produced for block or stick wrapping, this machine allows sufficient time, so that the product gets the required hardness, which is necessary or suitable for wrapping.
Packaging equipment:
The packaging of the margarine product is solely dependent on the type of margarine, consumer preferences and product consistency. Some of the ways in which margarines are packaged are like one pound solid, quarter pound sticks and many more.
Refrigeration Plants:
Ammonia and Freon 22 are used as refrigerants and refrigeration is one of the vital operations that take place in the plant where margarine is produced. It is also considered, as one of the important margarine manufacturing equipment, which is commonly used in the production of margarine.
