- Consider marinating time in your total cooking time for London Broil. Allow at least four hours for the meat to marinate. Since London Broil is typically made from tougher beef cuts, marinating adds moisture and tenderness. Use a commercial or homemade marinade of your choice. London Broil pairs well with flavors like garlic, soy sauce, red wine or balsamic vinegar. Salt and pepper the meat and place the meat with the marinade into a large plastic storage bag and seal. Turn the meat around in the bag two times until it's thoroughly coated with the marinade. Place the meat in the refrigerator for four to 24 hours.
- Broiling is the traditional cooking method for London Broil, hence the name. After the meat has marinated, let it sit on a counter until it comes to room temperature. Position a broiler pan so it is about four inches below the heat. Place the room temperature meat onto a broiler pan and broil it for 10 minutes on each side. The United Stated Department of Agriculture recommends using a meat thermometer to ensure the internal temperature of beef measures at least 145 degrees Fahrenheit. Don't overcook London Broil or it will become dry and tough. Wait at least ten minutes before cutting into meat or all the juices will leak from the meat.
- Grilling London Broil produces the same texture as broiling; however, many chefs prefer using a grill since broilers can heat up a kitchen. Place the room temperature meat onto a grill set to high heat and cook three minutes on each side to form a brown crust. Grill over medium heat for another five to six minutes per side. If you don't have a gas grill with easily adjustable temperature, grill London Broil over medium heat for seven to nine minutes per side. Verify the internal temperature is at least 145 degrees Fahrenheit. Allow another ten minutes for the meat to rest before slicing.
- Heating London Broil on the stove top can be a quick cooking option, especially for thinner cuts of meat. Heat a nonstick cast iron pan over medium high heat. Drizzle the pan with oil, then place the room temperature meat into the pan. Cook for three minutes per side. Don't move the meat while it's cooking or it won't form a crust. Remove from the pan and place it on a cutting board and check the internal temperature. If the inside isn't finished cooking, cook it through in a 325 degree Fahrenheit oven for 15 minutes. Take it out of the oven and let it sit for another ten minutes before serving.
