Families these days are much more conscious about their eating habits than they have been for the last fifty years or so.
Parents are starting to realize that not only are places like McDonalds obviously bad health choices, but also that super processed foods that you can buy pre-made at the grocery store can also be very unhealthy.
All too often, people worry that eating healthy food means eating bland food, or that preparing healthy meals takes too long or costs too much.
Yet, there really are many affordable and nutritional meals that can be prepared easily.
One dish that really fits that bill is a Shrimp Louie salad.
Often times, kids are reluctant to eat salads because anything that sounds that healthy can't taste good.
That's why it's so important to jazz salads up a little by adding some protein, like shrimp.
Shrimp and many other seafoods are excellent sources of protein because they're lower in fat and calories than poultry or red meat and they're full of nutritional value.
To create the perfect Shrimp Louie salad, all you need is 2 cups of shrimp that has been deveined, washed and cooked; a head of lettuce, a tomato, a lemon, two hardboiled eggs, a can or jar of olives, and some ketchup and mayonnaise.
Once you've assembled all the ingredients, chop the head of lettuce into small bits and arrange it on your plates.
Then divide the shrimp up evenly among the plates and lay it on the lettuce.
Slice the tomato, hardboiled eggs and olives and place them on top of the shrimp.
Mix the ketchup and mayonnaise in equal parts (1:1) to create the salad dressing.
You can either top each salad with the dressing or allow each person to top their own salad, but just remember that the salad will be healthiest if you use less dressing rather than more.
Finally, cut the lemon into wedges and garnish each salad with a wedge, which can be squeezed over each salad to add a citrus flavor to the shrimp.
Your whole family will be sure to enjoy your Shrimp Louie salad, which will be healthy, affordable, easy to fix and flavorful.
