- 1). Spray the baking molds with oil and place the lollipop sticks in the small indentation at one end. The stick should be halfway up into the mold cavity.
- 2). Stir the 2 cups of sugar, 1 cup of water and 2/3 cup of corn syrup in the pan over medium heat. Attach the candy thermometer to the side of the pan.
- 3). Bring the liquid to a boil and continue to cook until it reaches 300 degrees Fahrenheit on the thermometer. Remove the pan from the heat and set aside to cool. Let the mixture's temperature drop to 275 degrees Fahrenheit .
- 4). Add the 1/2 tsp. of flavoring, coloring and 1 tsp. of citric acid, if desired. The citric acid provides a slightly tart balance to the sweetness. Mix well.
- 5). Quickly pour into the prepared molds, making sure the sticks stay in place.
- 6). Allow the lollipops to cool for at least 10 minutes or until firm. Release them gently from the molds, wrap in cellophane and secure with a ribbon or twist tie.
