Ingredients
- 1 T. butter, oil or bacon grease
- 1/2-1 onion, chopped
- 4 cups water
- 1 tsp. salt or 2 bouillon cubes
- 1 egg
- 1/2 c. flour (more if necessary)
- 1/4 tsp. salt
- Leftover sausage, bacon or bologna
- Leftover, cooked vegetables (optional)
- Parsley or chives as garnish
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
Preparation
Melt the butter in a pan and fry the chopped onion over medium heat until golden brown. You may start by cooking the bacon and then brown the onion in the fat.
Bring the water and salt or bouillon to a gentle boil.
While the water is heating and the onions browning, mix the egg, flour and salt in a bowl until crumbly, like streusel. The amount of flour depends on the size of the egg.
Drop the streusel in the boiling water or broth and let it cook for 4-5 minutes.
Add the onions, leftover bacon, sausage and/or vegetables to the broth and heat through.
Sprinkle with parsley or chives and serve, with vinegar if desired.
