- 1). Combine the orange juice and lime juice in a small bowl. Add the oregano to the juice and mix well.
- 2). Use a knife to make slits in various areas of the roast. The slits should be the width of the knife and no more than 1/4 inch deep. To create the most intense flavor, four slits should be made on all sides of the roast. Insert a garlic sliver into each slit.
- 3). Fill the meat injector with the juice mixture. Injection sites should be near to the locations of the garlic slivers. Set aside a small amount of juice to baste the roast while baking.
- 4). Season the roast with salt and pepper.
- 5). Heat oven to 350 degrees. Cover the roast and bake for at least 40 minutes or until done. Marinate with a basting brush every 15 minutes in an effort to prevent drying.
