- 1). Trim excess fat from the pork butt with the knife.
- 2). Poke holes in the pork butt and force a slice of garlic into each one. Use as much or as little as you like.
- 3). Apply the barbecue rub generously and make sure it covers all sides of the pork butt.
- 4). Cover the pork butt with plastic wrap, place in a large pan and refrigerate overnight.
- 5). Remove the meat from the refrigerator, take off the plastic wrap and cook the pork butt according to your recipe.
