- 1). Set the butter on the counter 20 minutes before using to bring it to room temperature. Heat your oven to 350 F. Next, spray your loaf pan with cooking spray and set aside.
- 2). Stir together flour, baking soda, baking powder and salt.
- 3). In another bowl, cream together with a mixer the butter and the sugar. Add the vanilla extract and the eggs and mix together. You can beat the eggs before adding to the creamed butter and sugar instead of after.
- 4). Combine the mashed bananas and yogurt with the butter mixture and mix on low speed. Add the flour in small amounts until mixed in with the butter mixture.
- 5). Add the strawberries and the walnuts and stir until mixed. Don't overmix the batter or the bread could turn out tough. Pour the batter into the greased loaf pan.
- 6). Bake the quick bread between 45 and 50 minutes, or until a golden color. Stick a toothpick in the middle of the loaf. If it comes out clean, the bread is done, otherwise let bake for 5 minutes more. Remove from pan. Let cool before slicing.
