- 1). Preheat the oven to 300 degrees Fahrenheit.
- 2). Combine 1 cup of fruit juice -- orange, pineapple or apple works well -- with 1/2 cup of lemon or lime juice. Whisk in 1/4 cup of brown sugar, 1/2 cup finely chopped onion, 1/4 tsp. ground nutmeg and 1 tbsp. whole cloves or 1/2 tsp. ground cloves.
- 3). Remove the ham from its packaging.
- 4). Place the ham in a roasting pan. Put half -- about 1 cup -- of the mixture in the bottom of the pan.
- 5). Spoon a fourth -- about 1/2 cup -- of the mixture over the spiral ham, making sure it gets in between the slices. Push the slices back together so there aren't gaps between them.
- 6). Tent the foil loosely over the ham and pan.
- 7). Put the ham in the oven for 30 minutes. Brush the tips of the slices with the remaining fruit juice mixture, cover with foil and place back in the oven. Heat ham 10 minutes for each pound. For example, a five pound requires 50 minutes to heat through.
- 8). Drain the juices from the pan and combine with any leftover fruit juice mixture. Add enough additional juice to make 1 cup of liquid. Add 1/2 cup of diced fruit chunks of the juice you used. In other words if you used apple juice, use apple chunks, if you used pineapple juice use pineapple chunks. Add salt to taste, 1/4 tsp. of freshly ground pepper and 1/2 cup of chopped scallions. Serve as a sauce for the ham.
