Ingredients
- 2 tablespoons olive oil
- 1 can (7 ounces) tuna
- 1 anchovy fillet (or 1 teaspoon anchovy paste)
- 3 cloves minced garlic
- red pepper flakes, to taste
- 1/4 teaspoon dried oregano
- 3 cups creamy tomato soup
- 1/2 cup water
- 1 package (14.5-oz) penne pasta
- 1 tablespoon minced fresh tarragon
- 1/2 cup finely grated Parmigiano-Reggiano cheese

Preparation
Add the olive oil, tuna, anchovy, garlic, red pepper, and oregano to a large saucepan, and turn on the heat to medium. When the garlic begins to sizzle, cook stirring for one minute, then stir in the tomato soup and water.Bring to a simmer, and turn heat to low. Cook for about 10 minutes, stirring occasionally, while the pasta is prepared. Boil the penne a minute less than according to the directions on the package.
Drain, but do not rinse.
Add the penne back to the pot in which it was cooked (the heat is off), and pour over the tuna sauce, tarragon, and cheese. Toss well to coat the penne with the sauce. Cover tightly, and let sit for 2 minutes to absorb the sauce. Serve hot.
