Easy Sunday Mornin" Eggs And Potatoes

-1 potato -Onion-chopped (As much as you want.
I like onion so I used quite a bit.
) -2 cloves of garlic, minced -1 roma tomato-sliced (optional) -2 eggs, scrambled -Oregano, Pepper, Salt, and Cayenne Pepper (To taste) -Olive oil (You can use other oils, but olive oil is healthier than Canola or Corn oil) PREPARATION Put enough oil in a pan so to cook the potato cubes, but not deep fry.
Pre-heat your oil at a medium temperature.
Clean potato and cut into half inch cubes.
You can keep the skin or leave the skin on the potato if you want.
I personally keep the skin because a lot of the nutrients are held in the skin.
Peel, clean, and mince onion and garlic.
Put onion and garlic aside.
Slice one roma tomato into about five slices.
Place tomato slices aside.
Crack two eggs and scramble.
Place the uncooked scrambled egg aside.
COOKING Place potato cubes in oil to cook.
When the potatoes start to brown then throw in the garlic and onion.
You can also toss in your pepper, oregano, and cayenne pepper at this point.
You wait to put in the garlic and onion because they tend to cook faster.
Cook the mix of potato, onion, and garlic for three minutes.
Now, throw your uncooked scrambled egg over these veggies and let them all cook together.
Stir around occasionally to make sure the egg is evenly cooked.
It should take no longer than three-four minutes for the egg to cook.
You can now take this mixture and put it on a plate.
Add your roma tomato slices on the side.
And BAM!, an easy breakfast for a king.
