- 1). Remove the beef from its original packaging and drain any excess moisture away. Wrap beef completely in a single sheet of plastic wrap as tightly as possible.Then wrap again loosely in foil or freezer paper, if you have it available.
- 2). Place one or more packages of plastic-wrapped beef inside a large freezer back, then seal almost all the way. Use the straw to suck out any air remaining in the bag, then seal up the bag. Exposure to air is a big contributor to freezer burn.
- 3). Chill in the refrigerator for at least four hours, then move to the freezer. Chilling the meat first discourages the formation of condensation and ice crystals.
