- 1). Brush the grill with vegetable oil to keep the steak from sticking. Preheat the grill on high with the lid down for 10 to 15 minutes. Clean the grill with a brush. Then leave one burner on high and turn the other down to medium.
- 2). Place the steaks over high heat and sear for 2 to 3 minutes per side. This gives a nice brown crust to the outside of the steak.
- 3). Move the steaks to the cooler side of the grill and cook over medium heat until a meat thermometer registers 135 degrees F for medium-rare or 145 degrees F for medium. Cooking steaks to a higher temperature than this will dry them out. Use a thermometer rather than a time guideline, because each steak will cook differently. Temperature is much more accurate.
- 4). Remove the steaks from the grill and let them rest, covered, for at least 5 minutes. The steaks will continue to cook slightly from the residual heat from the grill. More importantly, the juices will redistribute through the meat so they don't come out when the steak is cut. This will make the steak more juicy and tender.
