Minty Chocolate-Covered Cookies
Ingredients
- 12 oz white chocolate candy coating
- 1/2 cup red candy coating
- 24 mint-flavored chocolate sandwich cookies (like Oreos)
- Prep Time: 15 minutes
- Total Time: 15 minutes
- Yield: 24 chocolate-dipped cookies
Preparation
1. Place the white chocolate candy coating in a medium microwave-safe bowl. Microwave in 30-second increments, stirring after every 30 seconds to prevent overheating, until the coating is melted and smooth.
2. Microwave the red candy coating in a small bowl, and when it is melted, pour it into a plastic bag with a hole snipped in the corner, or a paper cone.
3. Using forks or dipping tools, dip a mint cookie in the white coating until it's coated completely.
Remove it from the coating and let the excess drip back into the bowl, then place it onto a baking sheet lined with parchment or waxed paper.
4. While the white coating is still wet, draw an asterisk on top of the cookie with the red coating. Drag a toothpick in a circle about a half-inch from the center of the cookie, swirling the coating. Move out another quarter or half-inch, and drag the toothpick in another swirling circle. Finish with one more circle near the outer edge of the cookie.
5. Repeat the dipping and decorating until all of the cookies are finished. Refrigerate the tray to set the coating completely, for about 15 minutes.
6. Starlight Mint Chocolate-Dipped Cookies can be stored in an airtight container or bag at room temperature for up to a month.
Note: If you want to make these cookies extra minty, like their inspiration, consider flavoring the white chocolate coating with mint! The secret to flavoring candy coating is to use oil-based flavoring, not water-based. Most extracts you buy in the grocery store are water-based, so look for flavorings thing specifically labeled "peppermint oil," or check local candy or cake supply stores for chocolate flavoring oils.
Oils are generally stronger than extracts, so use a light touch and add just a few drops to the melted coating at first, tasting as you go, until you get a mint flavor you love!
