- 1). Wash the jars and lids. A dishwasher with a heated drying setting is the most convenient way to prepare jars. If you don't have a dishwasher, wash the containers in hot, soapy water, rinse thoroughly and then boil the jars for 10 minutes. Leave the jars in hot water until ready to use.
- 2). Use a tested recipe to prepare your juice.
- 3). Heat the juice to the recommended temperature for processing.
- 4). Fill the jars, leaving the recommended headspace at the top of the jar. Wipe any spilled juice from the mouth of the jar, then place the lid and tighten the ring lid. Boil the half-gallon jars for the recommended processing time, 10 minutes at altitudes under 1,000 feet, longer as directed at higher altitudes.
- 5). Remove the jars from the water bath and let them cool overnight. Remove the ring lids and check each jar carefully to make sure that the lid is sealed properly.
