Known for its black colour, the Chinese believes that it helps to keep their black hair healthy and glowing.
Besides containing fiber, it also contains various vitamins and minerals including iron, magnesium, Vitamin B and E.
Cooking time varies with different methods.
The cooking time is approximately 90 minutes with the use of rice cooker.
We will require the following ingredients: - Two (2) cups of black glutinous rice Six (6) large bowls of water Three (3) blades of pandan leaves Rock Sugar Coconut milk (optional) Preparation of ingredients the night before: Wash and rinse the black glutinous rice the night before.
Soak them overnight to soften the rice as well as for shorter cooking time.
Remember to cover the rice in order to prevent any insects or dirt landing on the rice in the middle of the night.
The next morning: Rinse and wash the black glutinous rice one or two times.
(Just the same as cooking rice) Fill the rice cooking pot with water and place the rice to cook.
Set the rice cooker to cooking 'rice' mode.
(Due to the amount of water, the heating time may be prolonged.
You may wish to use hot water instead).
Meanwhile, wash and clean the pandan leaves.
Bundle them and tie it up with a blade of the leaf.
This is only to add fragrance and flavor to the porridge, not for consumption later on.
Place the leaves in the cooker together.
Once in a while, open the lid and stir the porridge to ensure that it is not burnt.
Let the porridge cook until it softens and its texture turns paste-like.
Make sure the porridge does not bubble out of the rice cooker and create a mess.
Towards the end, you may wish to open the lid and let the porridge continue cooking.
Add in rock sugar to adjust the sweetness to your preference.
Optional: The porridge tastes better with some coconut milk before serving.
