- 1). Check the color of the eggplant skin. Though eggplants come in a variety of colors, whether it be white, green, or purple, the eggplant color should be bright. The skin should be shiny.
- 2). Check the eggplant's cap and stem. They should be a bright green color, regardless of the variety.
- 3). Press one finger into the eggplant. If the flesh of the eggplant springs back, you know that it is ripe. If an indentation remains, the eggplant is not ripe.
- 4). Check the weight of the plant. Ripe eggplants feel heavy for their size.
