- Heavy cream is about 30 percent fat and whole milk yogurt only contains about 4 percent fat. Because of this, yogurt is not the best substitute for heavy cream. Yogurt will curdle in high temperatures, making it a poor choice for baking.
- Creme fraiche can be used as a substitute for heavy cream because it has a similar texture and consistency. Creme fraiche will not curdle and its 28 percent fat content makes it closer to heavy cream's fat content.
- Yogurt may only be used as a heavy cream substitute if the recipe calls for a very small amount of heavy cream, such as one tablespoon or less.
