- 1). Employ the “rapid mix” method -- which calls for dry yeast to be mixed with other dry ingredients before the liquid is added -- to make your dough. (The traditional method calls for the yeast to be dissolved in warm water.)
- 2). Follow your dough recipe and place all of the dry ingredients, including the yeast, into the bowl, except for the last 1 to 2 cups of flour.
- 3). Attach the bowl and the Powerknead Spiral Dough Hook to your KitchenAid Professional. Raise the mixer bowl. Turn to speed "2" and mix for about 15 seconds or until the ingredients are combined.
- 4). Keep the KitchenAid Professional on speed "2" and gradually add the liquid ingredients. Mix for 1 or 2 more minutes. If the liquids are added too quickly, they will form a pool around the dough hook, thereby slowing the mixing process.
- 5). Continue to keep the mixer on speed "2" and add the remaining flour, half a cup at a time. Mix until the dough starts to lift from the sides of the bowl or for about two minutes.
- 6). Knead on speed "2" for about two more minutes or until the dough is smooth and elastic.

Lower the bowl and remove the dough from the bowl. Follow the directions in your recipe to shape and bake the dough.
