This roasted salmon recipes combines all the flavors Eastern Europeans love -- spicy mustard, honey, parsley and dill. I came up with this recipe when I was faced with a beautiful side of salmon and a desire to try something new. The result is fast and delicious. You can vary the herbs to your liking.

Ingredients
- 1 (1 1/2-pound) side of salmon, rinsed and patted dry
- Salt and cracked black pepper to taste
- 2 tablespoons honey
- 2 tablespoons Polish or other spicy mustard
- 1 tablespoon chopped fresh dill
- 1 cup panko crumbs
- 2 tablespoons chopped fresh parsley
- 1 teaspoon hot or sweet Hungarian paprika
- 1/4 cup olive oil or enough to moisten the panko crumbs
- Prep Time: 15 minutes
- Cook Time: 15 minutes
- Total Time: 30 minutes
- Yield: 4-6 servings Roasted Salmon
Preparation
- Heat oven to 400 degrees. Line a baking sheet with foil. Place salmon, skin side down, on the sheet pan and sprinkle with salt and pepper.
- In a small bowl, combine honey, mustard and dill. Spread evenly over salmon.
- In a medium bowl, combine panko crumbs, parsley and paprika until well blended. Stir in oil and moisten completely. Add a light sprinkle of salt and pepper and mix again. Distribute over salmon, pressing down lightly so crumbs will adhere.
- Roast salmon for 10-14 minutes. Begin checking at 10 minutes. Remove from oven and let rest 5 minutes before slicing into generous portions.
