This Summer we rented a vacation home in Hawaii on the Big Island. This ocean front villa is located in the Waikoloa Beach Resort. Our retreat was located in Hali'i Kai a beautiful oceanfront complex.
The panoramic views from our Lanai were breathtaking! We had unobstructed ocean views with the famous 6th ocean front hole of the Waikoloa Beach golf course in the foreground.
The views continued from every room in this 2nd floor corner two bedroom villa.
The kitchen like the rest of our vacation home was very well appointed but you always seem to have fewer kitchen utensils and limited cutlery. But thats okay, you are not planning on eating there all the time. However, when you do cook you want to keep it simple and perhaps with a little Island fare.  
I should mention that this complex has a Club House and a full time chef. In the summer it is open for lunch and dinner.
The views from the Club overlook a three tiered pool area with panorama vistas of the Pacific Ocean.
It is a great place to have dinner with friends as you watch another gorgeous Hawaiian sunset.
When we were not indulging ourselves dinning at the Club. We made use of our villa's kitchen. In the evening we would set the table on our Lanai for some private sunset dinning with friends.
After all the years we have spent in Hawaii we have learned that a weekly trip to the Farmers market is a necessity. If you have never visited an Hawaiian Farmers Market do so. You can get fresh made Kona Coffee along with a mix of produce and fruits, half of them you will not recognize. But that adds to the fascination of the Hawaiian Farmers Market and it is all organic.  
In some of the larger markets you may even find fresh-caught fish such as Opakapaka or Mahi.

For our Easy Vacation Recipe with an Island fare we choose Mahi from the market we visited along with green beans, potatoes and bananas. All four items were caught and picked early that same morning.  As a bonus we watched and laughed as our entertaining fisherman expertly cut our mahi fillets while telling embellish Hawaiian fishing stories.

The two recipe below are easy to prepare with fewer kitchen utensils and limited cutlery.

 Baked Mahi mahi

1/2 cups Bread Crumbs
2 Egg Whites
1/4 tsp Pepper
1/4 tsp Garlic Seasoning
1 1/2 lbs Mahi mahi Fillets
2 Tbsp soft margarinePreheat oven to 350 degrees. Combine bread crumbs, garlic seasoning and pepper in a bowl. Dip each fillet in egg whites then in bread crumb mixture. Place fillets in shallow baking dish that has been sprayed with nonstick cooking spray. Sprinkle any remaining bread crumb mixture over fillets. Dot the Mahi with margarine. Place in oven for 30 minutes

To complete our sunset dinner we added green beans and fingerling potatoes from the market.

    •    1 lb fresh green beans, whole, not cut
    •    1 lb red or white fingerling potatoes
    •    1 medium onion, diced
    •    4 garlic cloves, finely chopped
    •    2 tablespoons extra virgin olive oil
    •    1 tablespoon unsalted butter
    •    1 tsp sugar
    •    2 tsp salt
    •    Water

Slice fingerling potatoes in half and place into a large saucepan Fill pan with water, covering the potatoes. Add the salt and sugar to the water. Bring to a boil and cook for 5 minutes. Add green beans and boil for an additional 5 minutes. Drain and set aside. (Do not reserve water)

Over medium-high heat and in the same saucepan, combine extra virgin olive oil and 1 tablespoon unsalted butter and allow butter to melt. Add onion and garlic to oil/butter mixture. Saute until onions have started to lightly brown. Return green beans and potatoes to the pan, along with 1-cup water. Simmer, partially covered, on medium-low heat until most of the water has evaporated and potatoes are tender, about 10-15 minutes.

For our desert we had one scope each of vanilla ice cream toped with fudge sauce and bananas. Not the store bought kind. These are Hawaiian bananas were you will find a wide range of delicately flavored varieties. Would you believe, vanilla-flavored ice cream bananas.
Don't forget to buy at the market some fresh-baked malasdas, ( no-hole donuts ).
They will be delish for your morning breakfast as you sip Kona Coffee on your Lanai.
