- 1). Prepare an Italian seasoning herb mix. Blend equal parts of rosemary, marjoram, oregano, sage, thyme and dried basil. Add the mix to ground meats and sausage before cooking.
- 2). Mix up some Herbes de Provence: Tie a bay leaf and one tablespoon each of fennel seeds, lavender, savory, rosemary, thyme and basil in a small square of cheesecloth. Add the Herbes de Provence sachet to soups and sauces for French flavor. Remove before serving.
- 3). Discover Za'atar. Toast 2 tbsp. of sesame seeds and mix them with 2 tbsp. of fresh thyme, finely chopped, and 2 tbsp. ground sumac. Add 1/2 teaspoon sea salt. Sprinkle Za'atar on meats and vegetables to add Middle Eastern flavor, or mix it with olive oil and spread it on flatbread.
- 4). Combine equal parts ground ginger, ground cumin, ground coriander, paprika, turmeric, salt and cayenne pepper to make a classic Tandoori Indian spice blend.
- 5). Blend 2 tbsp. chili powder with 1 tbsp. each of salt, paprika and sugar for fajita seasoning. Add 1/2 tbsp. onion powder and 1/4 tbsp. each of garlic powder, cayenne pepper and cumin.
- 6). Blend equal parts of cinnamon, cloves, fennel seeds, star anise and Szechuan pepper using the mortar and pestle. Add this Chinese 5 Spice Blend to meat and vegetable dishes for Asian flavor.
